What kind of mustard do I use when making the greek dish "Kota Psiti "?

My friend is coming home from his one month trip and I wanted to make him at home dishes for his return . He is 100% greek so my expectations for this meal are high . So one thing Iam making is Kota Psiti a chicken dish . The recipe calls for mustard to be rubbed on the chicken , but doesnt give me a type of mustard to use . So if you are VERY familiar with this recipe and know what to use please let me know. I wanna keep everything traditional .

  1. I am a former chef and greek style mustard is alot like a dijon with wine like Grey Poupon, add some chopped or mashed garlic and dried oregano.

    The simple truth is you can use just normal, everyday prepared mustard as that is what Greeks normally use.

  3. You can use regular or spicy mustard depending on your taste. I roast mine with potatoes, garlic,oregano salt and pepper. I use olive oil and lemon juice to baste it.
