What kind of oil do I put on a cutting board?

I made a cutting board that fits over my sink and what do I need to put on it so I can cut food off of it?

  1. Mineral oil for the reasons given. But I have answered this question several time and I treat mine with paraffin wax. You can rub a bar of wax over the wood or do what I do. I grate some wax with a cheese grater, cover with a couple sheets of paper and run a clothes iron over it to melt the wax. Remove the paper while still warm. Then you can rub the wax wit a cloth. Preserves the wood and makes it look shiny.

USP-grade mineral oil is a popular choice as it is the cheapest pure food-grade oil you can buy (do not use vegetable or olive oils because they can turn rancid).  Mineral oil remains safe throughout its life.  There are various oils available for cutting boards and butcher blocks. Some are called "Butcher Block Finishes" or "Mystery Oil." Save some money by visiting the local hardware or drug store and purchasing Mineral Oil. (not mineral spirits - this is paint thinner).  

  4. Light coat of olive oil.But wash and rapply linseed oil is natural and won'tgo rancid and will make for a protective finish and keep wood from drying out.

  5. Old friend gave me a chopping block when he closed his  butcher shop.

    He scrubbed his w/ coarse salt to disinfect & rubbed in some olive oil

    but he did it every day so going rancid was not a problem.

    Have used mineral oil, but still use the salt before & after use .

  7. Mineral Oil is the cheapest one, you can go to Kitchen Supply stores and get special butcher block oil, but mineral oil will do the same thing, and yes, vegetable oil will turn rancid, (Made from food by-products and will begin to smell like rotten food)
