The passwords could be anything and they changed on a regular basis to keep the feds and/or local police from learning them and gaining entrance.  They could literally be anything form "Sam sent me" to "it looks like rain", to "dinner at 7:00".  The passwords weren't overly cryptic or creative, what was important was that they were only known by those who were allowed to enter and that they changed frequently enough to keep the authorities in the dark.  Speakeasies also had special music or songs they used if the authorities did show up to alert their patrons so they could either discard their liquor or flee the establishments.
