  1. Mariana! Start with your local health Dept.

  2. It varies from state to state but most states require you can sauces in a licensed kitchen that has proper canning facilities. this can be a church kitchen. to be sure contact you state department of agriculture as they are the ones who set the rules for farmers market sales. County health department will come into play only if you decide to create your own licensed kitchen facility.

The other person to talk to is the market manager of the farmers market where you intend to sell (and you need to decide on where you will sell before you start making any sauces). A good market manager will be able to tell your exactly who to contact and what the state and local rules are. if they do not know this information you probably want to find another market as this is a sign that the manager does not know what they are doing.
