Nursing professors are always in demand, because they can make more working as a nurse than as a professor.  For other fields you might be interested in, a lot of colleges post job openings on this site - see which fields have a lot of openings.  But since it takes about 10 years or more to get a PhD in a field, this might not still be the case by the time you're applying for a job.  http://www.higheredjobs.com

Don't worry about it.  Pick a field that interests you.  Earn your undergraduate and Master's degrees in that field.  By that time you will have a much better notion of the direction you would like to take with your research degree.  You will also have a better idea of the questions that are currently "hot" -- and attracting the research grants.  Complete your PhD and continue publishing in your field -- Universities offer positions to people who have published respected papers in their area of interest.  Any professorship in a good university pays enough for you to live -- and retire very comfortably.

    If you pick a field now, based entirely on the anticipated pay, you may pick a field that, 10 years from now, is "out of favour" or has too many qualified people competing for the position you want.  You may also pick a field in which you are unhappy -- and so unlikely to excel.  Choose rather based on your passion.

    If you don't have a passion yet, take a broad undergraduate program and include philosophy, history, macro and micro economics, political science, psychology, some math and a business law course if you can fit it in.   Such a general program of study will help you find your passion -- as well as giving you a firm foundation upon which to build your education.
