  1. Summer Corn and Rice Pilaf

    Ingredients

    Serves 4

    2 tablespoons unsalted butter

    1 cup basmati or long-grain white rice

    4 ears corn, kernels shaved from cobs

    4 large shallots, cut into 1/4-inch slices

    Pinch of sugar

    Salt and freshly ground pepper

    1/4 cup loosely packed mint leaves, coarsely chopped

    Directions

    Melt 1 tablespoon butter in a small saucepan set over medium heat. Add the rice, and stir until it is well coated. Add 2 cups water, increase heat to high, and bring to a boil. Reduce heat to medium low, cover, and simmer until all of the water is absorbed and the rice is tender when bitten, 18 to 20 minutes. Remove from heat, uncover, and fluff with a fork.

    Meanwhile, in a large skillet over medium heat, melt remaining tablespoon butter. Add the corn kernels, shallots, sugar, and a pinch each of salt and pepper. Cook, stirring occasionally to prevent burning, until corn and shallots are soft and tender, about 5 minutes. Remove from heat.

    Combine rice and corn mixture in a medium bowl. Add mint, and toss to combine. Add salt and pepper to taste. Serve.


  2. plain white or brown rice, or pasta with just some butter, or garlic mashed potatoes (with some of the gravy on top) ... steamed broccoli or a green salad

  3. Corkscrew pasta (Fusilli) holds on nicely to thin sauces...toss half the sauce with a teaspoon of parsley& pasta... place on a platter top with pork steaks and spoon the remaining sauce over the pork steaks.

  4. Well anything pork goes really well with beans. So you can go with that. Make Italian style green beans. Cook the gr.beans as you would, then drain the liquid. Take 1tbsp of olive oil. Just enough to coat the beans. Stir real good. Then sprinkle garlic powder, parmesan cheese and bread crumbs on the beans. Sprinkle equal amounts of each of how much you like, toss and serve. That or a nice salad

    1/2 pound elbow macaroni

    3 tablespoons butter

    3 tablespoons flour

    1 tablespoon powdered mustard

    3 cups milk

    1/2 cup yellow onion, finely diced

    1 bay leaf

    1/2 teaspoon paprika

    1 large egg

    12 ounces sharp cheddar, shredded

    1 teaspoon kosher salt

    Fresh black pepper

    Topping:

    3 tablespoons butter

    1 cup panko bread crumbs

    Preheat oven to 350 degrees F.

    In a large pot of boiling, salted water cook the pasta to al dente.

    While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.

    Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.

    Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

    Remember to save leftovers for fried Macaroni and Cheese.




  7. you can cook some carrots in the tomato sauce and add onions and eat with white steamed rice or mashed potatoes.
