What kind of spices the chief use to cook madrid rice?

today our university dining hall serve a food called" rice, bean and tofu madrid". It taste really good and i would like to know is there anyone know what kind of spice is used to cook madrid rice. Let me know thanks!!

  1. They may have used turmeric or annato/achiote color instead of saffron, esp if it's for a large university dining hall!  Maybe they also used some cumin and Spanish paprika as well.  They also may have used some Goya Sazon type of seasonings.


  2. Spanish paprika, saffron, cumin or chili powder, tomato bouillon, garlic salt.
