What kinda of cheese would best compliment grilled chicken

Cheesy Potatoes

1 bag of frozen shredded hashbrowns

1 bag mild cheddar cheese

1 tub sour cream (smaller tub)

1 can of cream of mushroom soup (or cream of chicken)

Mix ingredients together and pour into a sprayed 13 x 9 pan. Bake for an hour at 350 degrees. With 15 minutes to go, sprinkle more cheese on top.

You can find this side dish at any church potluck or family gathering in Ohio. They say this is the top side dish along with the green bean casserole. My husband loves these potatoes. You could totally do the grilled chicken, cheesy potatoes, salad and bread and you have a complete meal. And if your lucky, you'll have some remaining potatoes for the next day. In the words of Rachael Ray, "YUM-O!!"

i wouldn't pair cheese with chicken. that said, chicken parmigiana is a much-loved dish for a reason.

thats a link to the copycat recipe I found a while back, it asks to use chihuahua cheese and mix peppers in it, but since I never have the time, and since its really hard to find that cheese, I just use the four cheese blend.

Still taste really good.

My brother does a grilled Hawaiian chicken sandwich that is chicken breast marinated in BBQ sauce, grilled, topped with a grilled pineapple slice and melted cojack cheese, then served on a toasted bun.  Sounds kind of strange, but tastes really good.

I like provolone.  It has a salty taste.
