What kinds of cookies/cakes can I bake without owning an electric mixer?

Also, if you happen to know how to use dates in baking or in reguler entrees, I'd like to learn the basic method of cooking dates (boiling?). The ones I bought are very sturdy.

any kind you could bake if you did own one just stir or wisk well.

dates can be boiled or peeled and soaked to soften

You can make any recipe without using an electric mixer, I've never owned one, and I've never come across a recipe I couldn't make.  If the recipe uses cream cheese or butter, leave them at room temperature for about an hour before creaming them with the other ingredients, other than that, I've never come across problems mixing by hand, I've beat egg whites by hand also, never had a problem with it.

All types, as long as you have a strong spoon, a strong arm, and an extra large bowl.

you can bake pretty much any variety of cake or cookie without an electric mixer so long as you dont have to whip egg whites

You should be able to make any cake/cookie without an electric mixer. It's just harder because you have to do it all by hand with a spoon.
