What makes Airstream travel trailers so much more expensive than other travel trailers?

We have a 1982 Airstream excella.  To the right of the regualr kitchen faucet is a small faucet with a push lever.  What is this for and where can we find a manual to answer all of our questions on our rig?   Also, want a new sofa for this unit.  Where can these be located?  thank you, pat
