So what makes one a prince and someone a princess?

A prince is the male heir to a sovereign. (prince, grand duke, king, queen, etc depending on the country)

A princess in her own right is the daughter of a sovereign. Another type of princess is a woman who marries a prince. she must use her husband's title, to indicate that she does not have it by birth.
