That depends on the castle.  European castles were often primarily stone.  Asian ones were often primarily wooden.  It depends on the purpose of the castle, where it was built, and what was available to the local people.  In general, stone (be it large rocks or marble or what have you) was a common material for bases of castles the world over and walls in many places, because it was so incredibly strong.
