Question:

What meals can you cook easily with Tofu in it?

I just made varsity for cheerleading, so I want to go vegetarian and I am getting all this new stuff to eat like Tofu and Soy, but all Tofu comes in is a block! What can I cook with it as a meal and have as sides to have a healthy, well proportioned lunch and dinner that doesn't have so many ingredients? I made a stirfry which was actually really good, it had snap peas, onions, radishes, bean sprouts and tofu, some salt and pepper, and some olive oil. That's the kind of meal I am looking for. One that doesn't cost $50 at the store just to buy the ingredients and doesn't take that long to cook! As many meals as you can think of would be sooo greatly appreciated!!! Thanks!

  1. This is WAY easy and tastes great, its an asian noodle soup:

    2 tsp minced ginger root

    1 clove minced garlic

    1 red bell pepper chopped

    1/2-1 c. carrots, finely chopped

    1/4 c. green onions chopped (scallions)

    8 oz any kind of mushroom, shiitake works best (I hate mushrooms so I leave them out).

    In a soup pan, saute the garlic and ginger for 1 minute in 1 TAB oil. Add the carrots and saute about 2-3 minutes. Then add the pepper and green onions and mushrooms and sautee for a few more minutes.

    Then add:

    6 c. vegetable broth (some of them are WAY too tomato-ey so I dilute it with some water)

    2 TAB soy sauce

    salt and pepper to taste (if you want it a little spicy you can add 1-2 tsp red pepper flakes)

    2 packets ramen noodles (throw away the flavoring packets)

    1 medium tomato, diced

    Simmer until the noodles are soft and voila. When I make it it takes about 20-30 minutes TOTAL (that includes cutting vegetables and cooking time).

    If you want, you can cut your tofu block into cubes and sautee them seperately and add those in at the end as a protein source.

    This soup is fairly generic and you could literally use any vegetable or add sauteed chicken to it if you want to make it for a non-vegetarian.

  3. This is one I made up and eat often

      Saute one sweet onion in some vegetable oil.

      Add 2 cloves of garlic minced

    Add 2 potatoes cut in small pieces(to speed up the recipe, nuke the potatoes to pre cook them about 2 min)

      Add firm tofu cubed

      saute for a few minutes

      Add kale cut or torn  into small pieces

      sprinkle in some braggs amino acids(yum tasted like soy sauce)

      Add a 1/4 cup of vegetable broth and salt and pepper to taste

      Cover with a lid and simmer until potatoes and kale are soft but not mushy

    This is a very fast and you can add corn, peas ,carrots,peppers or anything.

      I eat it in a bowl, or in a tortilla wrap I eat cheese so I like to add parmesan or romano.

      A super quick lunch soup is a dollop of miso paste, some tofu cubes and hot water.

  5. tofu chicken fingers: extra firm tofu cut in thick strips, marinated in soya sauce overnight. drain. toss in container with lid, with bread crumbs and your favorite dried spices. bake in 350 oven until browned (best if you can flip them over at least once). serve with dip, such as salsa, 50-50 vinegar and soya sauce, or tofutti.

    Tofu is really versatile, and a great source of protein. It's easy to be a healthy vegetarian- just make sure you balance your meals and eat sensibly. Pizza for example, is fine now and then, but foods like that should not become a staple in your diet. Don't rely on junk, and eat a variety of delicious foods- wholegrains, cereals, nuts, beans, fruit and vegetables, soy products, etc. I hope you enjoy being veg. :-)
