It's just a myth that we use only 10% of our brains, as any neuroscientist will tell you. What Einstein had was far, far more dentdrites (basically, brain cells) than the rest of us, on average. As we age, our dendrites die unless we do things to keep them and to grow new ones. No one is sure why Einstein had so many, but it's a great lesson for us to try and keep our brains active as we age.
