Question:

What on earth are you meant to do with a Plantain?

We have a couple of good sized ones; perfectly ripe. I prefer savory, rather than sweet. Any ideas for a good vegetarian recipe? Many thanks in advance.

  1. I have a great answer for you. My mum used to do this and now I do it. Its great if you have kids too its a fast dish. Take a couple of eggs and beat them in a bowl. Add some pepper not much. Slice the Plantain longways into a few thin slices (not to thin). Put it in the egg mix until all covered and fry it on the pan until golden like you would eggs. It tastes great. I also do this with zucchinis

  3. Well plantains are very bountiful in Honduras(the country of my father) and there, Hondurans slice them in rounds, fry them and serve them with refried beans or a thick, white/yellow cream. Personally, I am not too fond of this, but everyone I know loves it :)

  6. Slice it and fry it up.  Plantains, however, must be cooked to be edible.

  7. Plantain must always be cooked. Cut it in circular banana type slices and fry in canola oil.  You can also boil it .

    Ingredients

    5 Plantains, ripe

    1 Onions, medium size

    1/2 lb. Carrots

    1/2 lb. Peas, frozen

    1/2 cup Raisins

    1/2 cup Walnut Pieces

    3/4 tsp. Cloves, ground

    3/4 tsp. Ginger, ground

    3/4 tsp. Cinnamon, ground

    1-1/2 cups Brown Rice

    3 cups Water

    Preparation

    This recipe can be prepared in either a large covered pot on the stove top, or in a larger covered glass or ceramic microwaveable dish in the microwave oven on high heat.

    Begin by washing and peeling the onion and carrots.  Cut into small pieces and and place in the cooking pot or dish.  Add the peas, water, cloves, ginger, and cinnamon.  Cover and bring the ingredients to a boil.  Add the rice and mix.  If cooking on the stovetop, reduce the heat to simmer.

    While the above ingredients are cooking, peel the plantains and cut into small pieces.

    When about 2/3 of the water has been absorbed by the rice, add the plantains, raisins and walnuts, mix, and continue to cook with the cover on until all the liquid is absorbed.

    Serve and enjoy!
