Not ordinary everyday food, I mean certain parts that the culinary sub-culture pursue as chic.

  1. All animal products are considered to be cruel to animals my one group of people or another.


  2. Peking Duck is force-fed and kept in very small spaces in order to develop a thick layer of fat under the skin, the most precious part of the cooked duck. Perhaps some animal rights groups would consider that unethical.

    What about Balut, the duck egg that is boiled about one day before the chick inside gets hatched?

  3. Some examples of dishes that are cruel to animals and yet are famous dishes within their own cuisine/country of origin:

    - Live prawn sushi (prawn is peeled while alive)

    - Live lobster sashimi (lobster's meat is sliced & replaced in shell & lobster is still alive)

    - Octopus sashimi (Tentacle flesh is sliced with octopus still alive)

    - Drunken prawns (live prawns are intoxicated in wine before cooking)

    - Deep-fried live fish (chef holds the live fish by the head and lowers into boiling oil tail first)

    - Brains scooped out from still alive monkey screaming away

    - Bear's paw (the paw is chopped off from living bear)

    - Shark's fin (very famous example, no need to elaborate!)

    - Dogs eaten in Asia are often badly beaten before being killed, in the belief the blood circulation is enhanced which improves the taste & texture

    - Live oysters shucked & eaten immediately upon harvesting, without cooking

    There are other dishes all around the world that may not be quite so 'chic' & well-known as goose liver & Peking duck but equally cruel to animals:

    - A delicacy called "Three Screams" in China (newborn mice who scream 3 times when dipped in spicy condiment, stabbed with a fork & finally bitten by the diner)

    - Tom praedt or ghost soup in Thailand (live mullet fry & hollow stems of water convolvulus are slowly heated in water, the fry rush into the cooler hollow stems which are eventually stuffed with cooked fish)

    - Baby eels or loaches with tofu, same cooking method as for ghost soup

    - In Columbia, iguana eggs are taken from a live female iguana like doing a C-section
