I usually make black beans and rice - so yummy. I also have put it into ground turkey meat with green chiles and spices to make taco salad meat.

What other recipes can I make? I don't like black bean salad.

  1. CORN AND BLACK BEAN SALAD  

    2 15 oz cans whole kernel corn

    2 15 oz cans black beans

    2 avocados, diced

    juice of two limes

    1/8 - 1/4 cup of finely diced red onion

    3/4 of a 16 oz jar salsa (spiciness is up to you)

    1 8 oz block of Pepper Jack cheese, grated

    Rinse corn and black beans well and pour into a medium sized bowl. Dice avocados and add to mixture.

    Cut limes in half and squeeze on top of avocados. Add onion, salsa and Pepper Jack cheese. Mix well.

    Refrigerate until ready to eat. This salad improves with time as the flavors blend.




  2. I throw them in a lot of things.  For example

    Mexican Lasagna

    1 lb hamburger

    1 sm onion

    ½ tsp garlic powder

    2 cans diced tomatoes w/green chilies

    1 can black beans (rinsed and drained)

    1 can whole kernal corn (drained)

    1 pkg Taco seasoning (mild, reg or hot)

    1 ½ cp sour cream

    1 ½ cp cottage cheese

    4 oz can chopped green chilies (even if you like it mild use at least a few chilies)

    1 bag corn chips

    ½ lb shredded cheddar cheese

    Preheat oven to 325*.  In a lrg skillet brown the hamburger, drain. Stir in the onion and garlic. Let that cook over low heat while you rinse and drain the beans and corn.  Add the tomatoes to the skillet. Stir in the taco seasoning till well blended.  Add beans and corn.

    In a med bowl stir the sour cream, cottage cheese and green chilies together till well blended.

    Spray a 13”x9” oven dish with cooking spray. Spread 1/2 of the meat over the bottom of the oven dish.  Layer with 1/2 of the sour cream mixture, sprinkle with corn chips and 1/2 of the cheddar cheese.  Repeat layers.

    Slide the dish into the oven and bake 15 min to blend flavors and melt cheese.  

    Cheesy Rice Quesadillas

    A vegetarian dish that’s delicious and filling.  You could add shredded chicken if you must have meat.  

    1 pkg corn tortillas

    1 pkg Rice a Roni Spanish Rice

    1 can diced tomatoes w/ chilies

    1 can corn, drained

    1 can black beans, rinsed and drained

    1 cp chunky salsa

    Cheddar cheese

    Sour Cream

    Salsa

    Prepare the Rice a Roni per instructions on the box in a skillet. When it’s done stir in the tomatoes. Make sure the beans are well rinsed with water and drained well.  Add them to the rice along with the corn and 1 cp of salsa, cover and simmer just till it's all heated thru.

    Heat a lrg skillet over med/high-heat. Lower heat to med. Spray with cooking spray, lay a tortilla in the pan and cover with the rice mixture to about 1/2" thickness. Sprinkle with cheese, lay another tortilla over top and cook till the top tortilla begins to curl at the edges. Flip it carefully with a pancake turner. Cook that side 1-2 min. Flip onto a plate and cut into quarters with a pizza cutter. Top with sour cream and salsa, serve.

    Salsa Beef Skillet

    1 lb hamburger

    2 cps water

    1 pkg Kraft Deluxe Macaroni n Cheese

    1/2 cp salsa  

    1 cp frozen corn

    1 can black beans, rinsed and drained

    ½ cp shredded cheddar cheese

    ¼ cp chopped green onion

    Brown meat in skillet, drain.  Return to skillet.

    Prepare Mac n cheese per pkg directions.  Add it to the skillet, stir.  Add salsa, corn and beans, cook 2 min or until heated through.  Top with cheese and green onions.


  3. This is really good:

    2 green bell peppers diced small

    2 red bell peppers diced small

    1 large onion diced small

    1 can Ro-Tel

    2 cans black beans with juice

    1 tablespoon or to taste of each ---garlic powder, onion powder, chili powder

    to taste -- salt, pepper, cayanne, paprika, cumin

    2 to 3 tablespoons minced garlic

    WATER...you will use as needed.

    olive oil

    Heat about 3 tablespoons OO in a large deep pan, add peppers, onion, and garlic and saute until wilted, about 10 minutes.  Add the rest and add some water, bring to a boil and then simmer low.  You will stir often, making sure it doesnt stick or get to thick, adjust water and seasoning as you see fit.  Cook until good and thick and all is married in pan.  It will come together as a good thick chili .

    Now once done with this, you have black bean chili.  If you want to jazz it up make nachos.

    Tortilla chips, shredded pepper jack cheese, the chili, extra raw onions, i like whole green olives, sliced avacado....

    layer the chips with chili and cheese...you can bake at this point and garnish however you want, or top with onions, olives and avacados, and bake at 500 for 10 minutes or until bubbly and gooey.

    Or make nachos and top with sour cream and salsa.  

    ANYTHING you want...make it fun and tasty for you.

    You can also take a can of rotel, a can of the beans and some cooked brown rice, mix all and cook down to a thick substance, use your own seasonings, get somem 12 inch tortilla rounds and make burritos, add cheese, lettuce, sour cream, anything you want.

  4. Cheese Enchilada Chowder

    6½ hours | 25 min prep |.

    SERVES 6 (

    Ingredients

    1 (15 ounce) can black beans, rinsed and drained

    1 (14 1/2 ounce) can diced tomatoes, drained

    1 (10 ounce) package frozen whole kernel corn

    1/2 cup chopped onion

    1/2 cup chopped yellow bell pepper or red bell pepper or green bell pepper

    1 jalapeno pepper, seeded, and finely chopped

    1 (19 ounce) can enchilada sauce

    1 (10 3/4 ounce) can cream of chicken soup

    2 cups milk

    1 cup shredded monterey jack cheese

    1 cup shredded cheddar cheese

    sour cream

    guacamole

    tortilla chips

    Directions

    1Add the black beans, tomatoes, frozen corn, onion, bell pepper, and jalapeno pepper to a 4 quart slow-cooker; stir to combine.

    2In a mixing bowl, add the enchilada sauce and cream soup; whisk together.

    3Gradually whisk in the milk until mixture is smooth.

    4Pour over vegetables in slow-cooker.

    5Cover and cook on LOW heat for 6-8 hours.

    6Add cheese and stir until melted.

    7Ladle hot soup into individual serving bowls and top with sour cream, guacamole and broken tortilla chips if desired.

    Blackened Chicken and Beans

    SERVES 4

    Ingredients

    2 teaspoons chili powder

    1/4 teaspoon salt

    1/4 teaspoon pepper

    4 boneless skinless chicken breast halves

    1 tablespoon canola oil

    1 (15 ounce) can black beans, rinsed and drained

    1 cup frozen corn, thawed

    1 cup chunky salsa

    Directions

    1Combine the chili powder, salt and pepper; rub on both sides of chicken.

    2In a large skillet, cook chicken in oil 4-5 minutes each side, until juices run clear. Remove and keep warm.

    3Add beans, corn and salsa to skillet; bring to a boil. Reduce heat, cover and simmer 2-3 minutes, until heated through.

    4Put bean mixture on a serving dish; top with chicken.

    Taco Lasagna

    SERVES 4 -6 (

    Ingredients

    1 lb ground beef round

    1/2 cup chopped green pepper

    1/2 cup chopped onion

    2/3 cup water

    1 (1 1/4 ounce) envelope taco seasoning

    1 (16 ounce) can black beans (rinsed and drained)

    1 (14 ounce) can petite diced tomatoes (undrained)

    6 large flour tortillas (8 inch)

    1 (16 ounce) can refried beans

    3-4 cups Mexican blend cheese

    chopped fresh cilantro leaves (optional)

    sour cream (optional)

    Directions

    1In a large skillet brown the beef, green pepper and onion over medium heat until onions and peppers are soft and meat is no longer pink. Add water and taco seasoning and bring to a boil. Reduce heat and simmer for 5 minutes. stir in tomatoes and black beans (rinsed and drained). Simmer for 10 minutes.

    2Use a greased 9 x 13 pan. Put 2 tortillas on the bottom overlapping as necessary. Spread with half of the refried beans, then half of the meat mixture and 1 cup of cheese. Repeat layers starting with tortilla shells. Top with remaining tortilla shells and cheese. Cover with foil and bake for 30 minutes at 350 or until cheese is melted . Garnish with fresh cilantro if desired and top with sour cream.

  5. BBQ Chicken and Black Bean Burritos

    • 1 (15 ounce) can black beans

    • 1 tsp olive oil

    • ½ tsp garlic powder

    • ½ tsp coriander

    • 12 ounces chicken (white or dark meat)

    • 1 Medium onion, chopped

    • 1 tablespoon olive oil

    • 6 ounces BBQ sauce

    • 8 ounces pepper Jack cheese, shredded, divided

    • 6 10 inch flour tortillas

    Drain and rinse beans. Heat beans with garlic and coriander in olive oil, set aside.

    Boil or bake chicken (if not already cooked) until no longer pink, about 15 minutes. Let cool, then shred with fingers. Heat olive oil in sauté pan, add onion and cook approximately 5 minutes until translucent. Add shredded chicken and BBQ sauce, stir fry until well blended.

    Divide beans and chicken mixture evenly across 6 tortillas, top each with some of the cheese (use approx 4 ounces), and roll into burritos. Place in baking dish spray and lightly with PAM (helps keep burritos from drying out). Bake at 350F for about 15 minutes,

    Extra cheese can be added on top of burritos if desired.
