I know there's a long list including last year's taxes, copy of pay stub etc...

references from past landlords, checking account number, credit cards, credit check (to be done by landlord). Past employment, criminal background check, security deposit, to name a few. Depends on the property manager/landlord as to what you will need to supply. Good luck!
