Wasaga beach, without a doubt.  

It's the longest freshwater beach in the world.  

Beach area 1 is full of teenagers and as you make your way down the beach, it gets less crowded and more family-oriented.  It has nice white sand.  Clean, compact sand under your feet in the water (not slimy and muddy like many lakes).  You can walk out into the water for ages before it gets too deep.  I love it there.  

Simcoe isn't known for its beaches.  More for cottages and boating.

Wasaga. by far. I wonder how those shops are doing. (if you remember the big fire)     But the best place in all of ontario (and maybe an hours drive from Orillia is MUSKOKA!!!!!!!!!!!!!!!!  go find a lake. any lake. jump in. especially in huntsville. wooooo muskoka!!
