  3. I believe its skimed to the required level (depends on order type), its also taken from the cow and pasturized and filtered.

    The fat in the milk, called cream, rises to the top, and half-fat milk has some of this skimmed off, literally just spooned off the top. Skimmed milk has all of the cream skimmed off, leaving low-fat milk behind.

    Commonly these days milk is also homogenised, which means making it the same all the way through. It is shoved through a very narrow tube at a high speed, which breaks up the fat globules that would normally float to the top and make cream. Instead, they stay small and spread through the milk. This happens after skimming, for obvious reasons that you can't skim homogenised milk.

    Then it's usually pasteurised, which means it's heated up to 70 celsius for a short time, to kill bacteria. UHT milk is heated up much hotter for a very short time.

    After this, it makes its way to the stores.

  7. Homogenization and pasteurization. The former keeps the solids in suspension so that the cream does not float to the top. The latter kills off germs and bacteria that will spoil the milk and render it unfit to drink.
