What proof do we have of things such as dinosaurs?

We have fossils from all ages.  It shows a progression of forms and despite arguments to the contrary, there are no gaps in the fossil record that would reasonably support that theory.  There were mammals in the age of dinosaurs so it isn't like they just appeared after them.

1.  Radiocarbon dating is useless for Mesozoic fossils - the half-life is much too short and won't work for anything much older than 50 or 100 thousand years in age.

2.  We have thousands of skeletons and parts thereof from the so-called "Age of Dinosaurs."  Radiometric dating of igneous rocks (based on isotope series other than carbon) and several other lines of evidence unambiguously date these to between around 245 and 65 million years in age.

3.  The physics underpinning radiometric dating are precisely the same as the physics underpinning the operation of a nuclear power plant.  If radiometric dating doesn't work, nuclear plants should either stop working or spontaneously explode from time to time.

Just to get technical, only non avian dinosaurs died off.  Our skies are full of little neornithe maniraptor theropod dinosaurs.  People just usually call them birds.  The non avians, unfortunately, went extinct and we have fossilized bones, eggs, soft tissues, p**p, foot prints; non fossilized proteins; and the genetic material of birds that all make it pretty clear they are real.
