What questions to include?

I would like to have applicants I'm interviewing take a short written test (about 15-20 questions) so I can get an understanding of their experience working in restaurants. What questions should I include?

I was thinking:

*What side to you serve & clear food on? And Drinks?

*Name 3 prominent chefs in (my city) ?

*What would you do if a guest was more than halfway finished with their meal but decided that they were unhappy with it?

*Name 3 types of ... (maybe oysters, mushrooms, cheeses, or something unique.)

*What would you do if you received a low (or no tip) on a table that appeared to be satisfied?

I would really like it if their food & restaurant knowledge went beyond reality TV & The Food Network.

  1. Think about what you want a server to do when you go to a restaurant. That is where most servers s***w it up. They are to busy making sure they have the menu right, the food right, and fallowing sanitation laws that sometimes the little things get skipped. like refill a glass when its half full, or make sure to bring extra napkins when you see kids at the table. See if they can answer the common sense things. Also because the heatlh department is a person no one wants to make angry make sure they know the basics of handling safety. hair pulled up off collar, don't l**k your fingers, stuff like that. Anyone who has been a server before will know about health dept regulations and will know the little things to make your customers happy. Oh and have them try to seel you on one of your own menu items. you pick. anyone can sell their favorite thing have them tell you about your favorite thing.


  2. their experiences is in their resume and bio-data, you do not have to deal with it.

    the most important questions you are going to ask or lets say the important things you must know in your prospect crews are their attitude towards your customer.

    i mean they are the front liners of your business, the way they deal with customers reflects the name of the restaurant/business establishment and YOU!

    you must realize that you do not only need peole who knows their work, but you also need people who knows how to deal with people.

    Figure it out.
