  1. Hi, the best region in France revered for its gastronomy is Lyon's Region, the city is as well known for its food. Lyon is France’s capital of gastronomy. This know-how was built up over the years by the city’s women folk, notably the Mères lyonnaises. Food fans can just as easily find a cosy auberge and its ham, bacon and pate washed down with a Beaujolais from the nearby vineyards or the more hushed tones of a five-star restaurant run by one of France’s internationally-renowned chefs, such as Paul Bocuse, Lacombe, Orsi or Troisgros (in Roanne).

    After the Lyon's Region there is the South West Gastronomy in Perigord. Specialties abound with simple but extraordinarily delicious dishes: truffle omelette, poêlée of foie gras, duck magrets, foie gras, goose rillettes. But also truffle salads, fish from rivers, farm house poultry in mushroom sauce…In winter, it is worth your while to visit “marchés au gras” like the one held in Périgueux for example. In the Périgord Noir,  it is the turn of pork and charcuterie to stand on the table all year round. In the Périgord Vert,  goats have given birth to an excellent specialty, both strong and tasty: a little round and pungent cheese called cabécou.

    And for your information Paris has never been well known for its food !

    you are right to exclude paris since it's far from being the best, most of the best restaurants are outside paris. lyon is considered the capital of french gastronomy.

    - foie gras,

    - truffle

    - Bordeaux, Cognac (= brandy) wines

    - preserved duck...

    other places are Alsace, Lyon, Brittany and Auvergne...
