Everything that the captain isn't doing- such as talking to ATC, setting the autopilot, checking weather, settings systems, etc. Most airlines use a PF (pilot flying) and PNF (pilot not flying) system- the captain and co-pilot can be either. Whoever is the PF flies the plane and sets the autopilot when in use, the PNF talks to ATC and sets other systems.

    The biggest function of the PNF is to ensure the PF is doing everything correctly.
