In health I have to cook something and bring it in to class. I don't really want to make brownies or cake etc.. Because everybody else is going to think to do that. So what should I do. Please include recipe. I want something that has fruit in it but it doesn't have to. It could also be as simple as popping a bag of popcorn.

  1. Fruit Pizza

    INGREDIENTS (Nutrition)

1 (18 ounce) package refrigerated sugar cookie dough

1 (8 ounce) package cream cheese, softened

1 (8 ounce) container frozen whipped topping, thawed

    2 cups sliced fresh strawberries

    1/2 cup white sugar

    1 pinch salt

    1 tablespoon cornstarch

    1/2 cup orange juice

    2 tablespoons lemon juice

    1/4 cup water

    1/2 teaspoon orange zest

    DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Slice cookie dough and arrange on greased pizza pan, overlapping edges. Press dough flat into pan. Bake for 10 to 12 minutes. Allow to cool.

In a large bowl, soften cream cheese, then fold in the whipped topping. Spread over cooled crust. You can chill for a while at this point, or continue by arranging the fruit.

Begin with strawberries, sliced in half. Arrange in a circle around the outside edge. Continue with fruit of your choice, working towards the middle. If bananas are used, dip them in lemon juice so they don't darken. Then make a sauce to spoon over fruit.

In a saucepan, combine sugar, salt, corn starch, orange juice, lemon juice and water. Cook and stir over medium heat. Bring to a boil, and cook for 1 or 2 minutes, until thickened. Remove from heat, and add grated orange rind. Allow to cool, but not set up. Spoon over fruit. Chill for two hours, then cut into wedges and serve.

    Berry Good Smoothie

    INGREDIENTS (Nutrition)

    16 cubes ice

    1/2 cup water

1/2 cup mixed berry fruit juice

    1/2 cup frozen red raspberries

2 1/4 cups frozen mixed berries

    1/4 cup frozen blueberries

    DIRECTIONS

Blend 16 ice cubes in a blender until crushed. Pour in water and juice. Blend. Pour in frozen berries. Blend until smooth. Pour into chilled glasses.

These are just a couple of ideas.  I think for a health class you should go for something a little more healthy than cakes and brownies anyway.  Or you could cut up some fruit buy some chesecubes and serve some crackers with it.

    1 sm. container Cool Whip

    1 lg. pkg. cream cheese

Cool evaporated milk, then whip until almost stiff. Add cream cheese; mix well. Add Cool Whip (fold in with spoon). Drain fruit cocktail and add to Cool Whip mixture. Refrigerate and serve.

  6. How about an Eton Mess? Really simple, really tasty and looks good with out being too neat!

    1. Chop strawberries (or whatever fruit you fancy/have to hand). put into a bowl and sprinkle lightly with sugar or sweetener. You can always leave this step out if you want to make it healthier! Leave the fruit to soak in the sugar for at least 30 mins (better for a few hours)

    2. whip some cream until light peaks form. mix in some vanilla extract  and some icing sugar (again, leave out the icing sugar if you want) keep tasting until you're happy.

    3. Mix the fruit into the cream and set aside.

    4. Make some meringues (or buy some ready made ones) and bash them up into biggish chunks. Gently mix this into the cream too.

    4. serve in a big pile with some pieces of fruit on top.

If you want something that looks a bit neater, you could make a pavlova instead. Make exactly as above, but instead of bashing up the meringues, keep them whole and sandwich the cream and fruit in layers between them.

If you want to have a go at your own meringues here is a good recipe:

4 large egg whites , at room temperature

    115g caster sugar

    115g icing sugar

make sure your equipment is completely clean and dry. meringues won't rise if there is a speck of water or dirt on anything!

using an electric whisk, beat the eggs on a medium speed until fluffy and stiff peaks form.

turn the mixer on high and add the caster sugar 1 spoonful at a time, beating for 3 or 4 seconds before adding the next.

sift a third of the icing sugar into the mixture and gently fold in with a wooden spoon. do this for the remaining thirds and mix gently. The mixture should look like a billowy snow drift.

Now you can do what  you like with it! spread it onto greaseproof paper with the back of a spoon, about 2 inches thick. Shape into a couple of large circles for the pavlova, or spread smaller and thicker blobs for the eton mess. bake for 1.5 hours at 100 degrees/ gas 1, until crisp on the outside.

Hope this helps and good luck!
