What should I cook for a vegetarian dinner?

I want to cook a nice dinner for four people. Vegetarian and easy. I must stress easy.

I'm not a good cook, and I wanna make something with as few ingredients and effort as possible - but something which tastes great.

Any ideas?

  1. What bout a vegetarian jambalaya or lasagna? or you can make some nice tofu and veggies stir fry or a delicious spinach lasagna. Mmmmm

    And on the side you can make some delicious salad or garlic toast.

    This is a tasty lasagna;

    1 pound eggplant, sliced into 1/4 inch rounds

    1/2 pound medium fresh mushrooms, cut into 1/4 inch slices

    3 small zucchini, cut lengthwise into 1/4-inch slices

    2 sweet red pepper, cut lenthwise into 6 pieces each

    3 tablespoons olive oil

    1 clove garlic, minced

    1 teaspoon salt

    1/2 teaspoon pepper

    1 (15 ounce) container reduced-fat ricotta cheese

    1/4 cup grated Parmesan cheese

    1/4 cup egg substitute

    1 (26 ounce) jar meatless spaghetti sauce

    12 no-boil lasagna noodles

    2 cups shredded part-skim mozzarella cheese

    3 tablespoons minced fresh basil

    Coat two 15-in. x 10-in. x 1-in. baking pans with nonstick cooking spray. Place eggplant and mushrooms on a prepared pan. Place the zucchini and red pepper on the second pan. Combine the oil and garlic; brush over both sides of vegetables. Sprinkle with salt and pepper. Bake, uncovered, at 400 degrees F for 15 minutes. Turn vegetables over. Bake 15 minutes longer. Remove eggplant and mushrooms. Bake zucchini and red pepper 5-10 minutes longer or until edges are browned.

    In a bowl, combine the ricotta cheese, Parmesan cheese and egg substitute. Spread about 1/4 cup pasta sauce in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Layer with four lasagna noodles (noodles will overlap slightly), half of ricotta cheese mixture, half of vegetables, a third of pasta sauce and 2/3 cup mozzarella cheese. Sprinkle with half of basil. Repeat layers. Top with the remaining noodles and pasta sauce.

    Cover and bake at 350 degrees F for 40 minutes. Uncover; sprinkle with remaining cheese. Bake 5-10 minutes longer or until edges are bubbly and cheese is melted. Let stand for 10 minutes before cutting. serves 9.

  2. veggie fajitas

    Ingredients

    - 1 pack of tortillas

    - 1 red, 1 green, and 1 yellow pepper

    - 2-3 cooking onions

    - store bought teriyaki sauce

    - sour cream

    - lettace

    - salsa

    - cheese

    1. First I cut the peppers into strips and the onions into rings.

    2. Melt a little margerine in a large wok or frying pan.

    3. Toss in the onions and fry until half cooked (about 3-5 minutes)

    4. Add the peppers and continue to cook until desired crunchiness (my husband likes the veggies limp, but i prefer the peppers to still be a little crunchy)

    5. Add about 1/3 of a bottle of teriyaki sauce. You have to make sure to buy a thick teriyaki sauce (a lot of the thin ones are really salty - mostly soy sauce) Stir it in over the heat.

    6. Put together your fahitas. I like to serve the toppings in a buffet style so people can take what they want. I have shredded lettace, cheese, salsa, sour cream and sometimes diced tomato.

    p.s. my problem is i always try to pack too much into the tortilla :-)

  3. A vegetarian friend of mine taught me this one:

    Rice Pie

    1 uncooked prepared pie crust

    2 cups of rice

    1 vegetable bouillion cube

    1 bag mixed frozen vegetables

    1 cup grated cheese

    Boil up 2 cups of rice as directed, with a vegetable bouillion cube and stir in a bag of mixed frozen vegetables.  I like to use the "California Blend".  Pour it all together into the pie crust, top with cheese and bake for 30 minutes at 350 degrees F.  It's delicious and you don't miss having no meat at all!

  4. Bit of olive oil and garlic heated in a skillet, add in whatever veggies you like, prepare some al dente pasta, when veggies are done add drained pasta right to the pan, toss and heat through. If you eat cheese, put some shredded in the mix

  5. Potato Burgers

    Form leftover mashed potatoes into patties. Dip into beaten egg & then into breadcrumbs. Let sit in fridge for one hour. Fry in a bit of oil until brown on both sides & serve immediately. Always end up falling apart. (i'm not sure what I've done wrong) I serve between 2 slices of bread & TONS of egg salad spread.

    Egg Salad spread

    Mix a crumbled hard cooked egg w/1 TB of mayo & a TB of any or all of the following: diced cleery or onion, parsley, tofu & mashed beans.

    For the stir fry you need

    bell peppers green yellow orange

    mushrooms

    carrots

    celery

    you can use any vegetable you like you can also ad tofu if you like, add your stir fry sauce and you are done.

  8. This is super easy

    Squash

    Onion

    Cayan Pepper

    Velveeta.

    Slice the squash into bite size pieces

    Same with the onion

    Season to taste with pepper and salt and season with/without Cayan

    Bake at 375 for 30 minutes

    Cube velveeta and add Then bake until cheese is melted

  9. make a zucchini stew.  at most it will take 20 minutes to prepare.  

    while you saute 1 large vidalia onion,[sliced in rings], 2 large potatoes peeled and cut in cubes, 5 cloves garlic,[crushed],  5 large  basil leaves in olive oil,  on a very slow flame, peel and cut 4 large zucchini or several  large green squash,  into 2 inch pieces.  when the onion is transparent, add the zucchini or the squash and 2 or 3 large chopped tomatoes.  you can salt and pepper to taste.  mix the whole thing with a wooden spoon, and cover and cook over medium low heat til you can pull a fork easily out of the squash.[about 20 minutes, you don't even have to stir it.]  [the squash will make it's own juice]  you can serve this with an italian bread, or brown rice if you like.  we like it just as it is.
