Tired of making the same old things every week. Something relatively simple with no hamburger meat or pasta.

  1. Grilled Cheese?

    Butter both ends, add cheese to middle and either cook in an oven until bread turns gold, or fry on a pan.


  2. Unforgettable Chicken Casserole

    3 cups chopped deli-roasted chicken (or other cooked, diced chicken meat)

    2 cups finely chopped celery

    1 cup (4 ounces) grated Cheddar cheese

    1/2 cup slivered almonds

    1/2 cup light sour cream

    1/2 cup light mayonaisse

    1 can reduced-sodium cream of chicken soup

    1 (4-ounce) can water chestnuts, drained and chopped

    1½ cups French fried onion rings

    Stir together first 8 ingredients in a large bowl. Spoon into a lightly greased 11x7” baking dish.

    Bake at 350ºF for 40 minutes; sprinkle onion rings evenly over top. Bake 5 more minutes or until bubbly around edges. Let stand 10 minutes before serving.  Makes 6 to 8 servings.

    CURRIED CHICKEN & BROCCOLI

    (serves 8-10)

    2 whole (both sides) boneless chicken b*****s, cut to small pieces

    2cans cream of chicken soup

    1cup mayonnaise

    2 Tbsp. (fresh) lemon juice

    ¼ tsp curry powder

    1 bunch blanched broccoli crowns

    1 cup grated cheddar cheese

    In a large baking pan, layer chicken breast pieces with blanched broccoli crowns. Separately, combine, and mix thoroughly, soup, mayonnaise, lemon juice and curry powder. Pour mixture over chicken and broccoli. Spread grated cheese over top.

    Bake at 375 for about 40 minutes or until bubbling and slightly browned.

    Shrimp Company Casserole

    2 to 3 lbs. Shrimp, cooked, peeled, and cleaned

    1 C. Rice, Cooked

    1 C. Sharp Cheddar Cheese

    1 can Mushroom Soup

    1/2 C. Chopped Green Pepper

    1/2 C. chopped Green Onions

    1/2 C. chopped Celery

    1 stick Butter

    8 lemons, sliced very thin

    Mix first four ingredients together. Sauté green peppers, green onions, and celery in butter. Add to shrimp mixture. Put into a long flat casserole and cover the top with lemon slices. Cook covered for about 20 minutes at 375ºF.


  3. Last night - chicken nuggets and tater tots. Chili cheese dip and home made tortilla chips.

    Tonight - Chicken and Dumplings!!

    Make something like pot roast, taters, onions, carrots.

    Brisket with corn on the cob and cornbread.

    Red beans and rice with sausage in it, jambalaya with chicken and sausage.

    You need to pick up a couple of bottles of PRE MADE MARINADE - keep it on hand, especially for occasions like this.

  8. Simple Chicken Saute Ingredients

    2 Chicken breast halves,  2 tb Fresh lemon juice  

    1 tb Olive oil  1 tb Soft margarine  

    1 1/2 tb Green onions, chopped  2 ts Fresh parsley, chopped  

    4 Mushrooms, chopped  

    Instructions for Simple Chicken Saute

    Rinse the chicken, remove all visible fat, dry throughly. Flatten slightly with the heel of your hand to attain uniform thickness for even cooking. Heat the olive oil in a 10" non-stick skillet. Saute the chicken for 3 minutes each side, or until just firm to the touch. Remove chicken from pan and keep warm. Using the same skillet, saute the green onions until translucent. Add mushrooms and cook for 2 minutes. Stir in the lemon juice and boil til most of the liquid has evaporated. Stir in the soft margarine. Spoon this mixture over the chicken and sprinkle parsley on top. Serves 2 Each serving provides: 255 calories 3 g carbohydrate 28 g protein 155 mg sodium 6 g fat 68 mg cholesterol (To bring the fat down even further, I spray the skillet with cooking spray rather than use olive oil, and substitute 1 tsp. olive oil for the margarine. This makes the sauce a bit thin, but it really does bring down the fat content, eliminates the saturated fat altogether, and tastes better too

  9. Omlette. They're pretty simple AND you can add whatever filling you like. They go well with salad or even just with fries.

    Mashed Potato Casserole

    1 cup milk

    1 (8 ounce) package cream cheese, softened

    1 (8 ounce) container onion dip (like the chip dip , except I am going to substitute mayo + onion soup mix)

    2 eggs, beaten

    2 cups water

    1/2 cup margarine

    1 teaspoon salt

    3 cups instant mashed potato flakes

    2 tablespoons margarine

    Preheat oven to 350 degrees F (175 degrees C). Grease one 2 1/2 quart casserole dish. Blend together milk, cream cheese, onion dip and eggs. In a saucepan over medium heat, combine water, margarine and salt. Bring to a boil and add instant potato mix; mix well. Add cream cheese mixture, mix well and pour into prepared dish. Dot the top with margarine and bake at 350 degrees F (175 degrees C) for 30 to 45 minutes.  

  11. Bake some country style pork ribs! Boil some corn on the cob, make potato salad... There are some REALLY good recipes for potato salad on Good Morning America's website from when Emeril had a contest not too long ago. I made the winner's recipe and the runner up, and they were both delicious.
