  1. Pancakes are good.

So is apple sauce cake, banana nut bread and things like that.

  2. Biscotti dessert cookies

    2 Eggs

    6 Tablespoons Honey

    1/2 Cup (Softened) Butter

    2 Teaspoons Baking Powder

    1 Cup (Ground Toasted) Hazelnutz

    1 1/2 Cups Flour - Wheat

Preheat oven to 350 degrees F.

Combine flour, hazelnuts, and baking powder.

In a large bowl, beat butter and honey until smooth. Beat in eggs one at a time, beating well after each addition. Gradually blend in the dry ingredients.

Divide dough in half. On prepared baking sheet, form each half into a log about 12 inches long and 2 inches wide, spacing about 2 inches apart.

Bake for 14 to 16 minutes until golden brown. Transfer logs to a cutting board and cut on diagonal into 1/2 inch thick slices. Lay slices on ungreased baking sheet and bake for 10 to 12 minutes longer until they are dry. Transfer to wire racks to cool. Store in a tightly sealed container and keep them for a couple of days before serving.

    Granola Bar

    1/2 Cup Cranberries - Dried

    1 1/3 Cups Granola

    1 Teaspoon Vanilla Extract

    2 Eggs

1 3/4 Cups (packed)  Brown sugar

    1/2 Cup Shortening

    2 Teaspoons Baking Powder

    3/4 Teaspoon  Salt

    1/2 Cup (finely chopped) Walnuts

    3/4 Cup  Wheat  flour

    3/4 Cup All Purpose flour

    Strawberry shortcake

    1 1/2 - 2 Cups (for topping) Whipped Cream

1 Tablespoon (for topping) Vanilla Extract

3 Tablespoons (for topping) Sugar - White

2 Pints (cut in half, for topping) Strawberries

2 Teaspoons (for cake) Vanilla Extract

1 1/2 Cups (for cake) Heavy Cream

12 Tablespoon (cubed, for cake) Butter

1 Teaspoon (for cake) Seasoning - Sea Salt

    1/2 (zested, for cake) Oranges

    1/2 (zested, for cake) Lemons

1 Tablespoon plus 1 1/2 Teaspoon (for cake) Baking Powder

1 Teaspoon (for cake) Seasoning - Cinnamon

4 Tablespoons (for cake) Sugar - White

1/2 Cup (for cake) Flour - Wheat

2 1/2 Cups (for cake) Flour - Unbleached

    For the Cake:

Preheat the oven to 375 degrees F.

In a medium-size bowl, use your hands to mix the two types of flour, sugar, cinnamon, baking powder, citrus zests (of half of each lemon and orange), and sea salt.

Work in the butter cubes with your fingers until the mixture is crumbly. Add the cream and mix to blend.

Turn the dough out onto a lightly floured surface. Roll and cut to desired size and thickness. Thicker, smaller-sized cakes are moister after they bake and taste better the next day. Place them on a lightly greased baking sheet and bake 8-12 minutes. Set aside to cool.

    For the Strawberry Topping:

Mix all of the ingredients except the whipped cream and allow mixture to saturate for 30 minutes.

To serve: Split the shortcakes, spoon the strawberries over the bottom half, replace the other half, and top with a generous dollop of the whipped cream. Serve immediately.

Preheat oven to 350 degrees F. Lightly grease a 9 inch square pan.

In a large mixing bowl, cream the shortening, brown sugar, eggs, and vanilla extract. Beat well after the addition of each ingredient.

In small saucepan, cover the cranberries in water and boil for 10 minutes. Drain and chop into small pieces. Add to egg mixture.

Slowly add in white and wheat flours, walnuts, salt and baking powder. Mix until well blended. Fold in granola and mix well.

Spread dough into baking pan and bake 20 to 25 minutes. Let cool before cutting into bars. Store in airtight container.

  5. Simple Whole Wheat Bread --

    INGREDIENTS

    3 cups warm water (110 degrees F/45 degrees C)

2 (.25 ounce) packages active dry yeast

    1/3 cup honey

    5 cups bread flour

    3 tablespoons butter, melted

    1/3 cup honey

    1 tablespoon salt

3 1/2 cups whole wheat flour

    2 tablespoons butter, melted

    DIRECTIONS

In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.

Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.

Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.

Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely
