First, what is the subject for this Journal is something that needs to be known to assist you properly.  I agree with one poster that "just start writing" might be the answer, especially if it is in a class where artistic and creative release is especially desired.  If it is a subject that you need to take notes from, simply write about what you learned that day in the class and what it means to you, what it can do to help you, or if it meant nothing to you.  I am sure your teacher wants something "like" that and not something like a diary.

    just start writing daily. write about your life, your thoughts, your goals and dreams.

    any writer will tell you that the key to being productive is to write on a schedule - writing daily helps pass that writers block - if you can write about any topic - you will never get stuck.

    so just start writing.

A journal is a book in which you write a record of what happened and your thoughts about it daily.  From what you have written, I don't know if your teacher wants you to just get into the habit of writing every day, or whether s/he has some specific agenda - for example,  I teach marketing, so I often have my students write a "purchase journal", in which they document purchases they have made and how they went about making those decisions to buy.  Obviously, each student doesn't necessarily buy things every day, so I give them a certain number of entries that I want them to include, rather than having them write every single day.
