I have tonnes of slightly unripe nectarines...any suggestions would be greatly appreciated. I've never cooked with nectarines before.

  1. nectarine sorbet

    2/3 cup sugar

    2/3 cup light corn syrup

    1 cup water

    1 teaspoon grated lemon peel

    2 tablespoons lemon juice

    8-9 large nectarines

    Directions

1In a small saucepan combine sugar, corn syrup, water, and lemon peel.

2Stir over medium heat until mixture comes to a boil.

    3Stir in lemon juice.

    4Cool to room temperature.

5Remove and discard pits from nectarines.

6Puree nectarines in a blender or food processer until smooth.

7Add syrup mixture and blend 2-3 seconds.

8Pour into ice cream maker and freeze according to manufactuers instructions.

if having bits of skin in the sorbet bother u than u will have to peel the nectarines first.

  2. You can make nectarine preserves or you can stuff a pork roast with them.

You can ripen them and cut them into your cereal in the morning.

You can make nectarine smoothies( if they're not sweet enough add some honey).

Earth and Vine makes a great nectarine jam/preserve.

    Look them up.

  3. cook them up in a little low calorie lemonade, and then put them in sterilized jars...then you will have them on hand to enjoy all year round when they are out of season.  Great for brekky with a little yogurt, or as a filling for a pie...or a nectarine puree over ice cream - yum-mo!!

  4. Nectarine pie!  Nectarine cookies!  Nectarine cake!  Nectarine syrup!  Nectarine jam!  Nectarine pizza!  Nectarine salad!  Nectarine pasta!  Nectarine face wash!

Srsly though, try them on a salad with some feta cheese and balsamic or raspberry vinaigrette.
