What should I expect at a fine dining restaurant?

I'm about to apply for a job as a server at Commander's Palace tomorrow, and I was wondering what I should expect if I was to get the job. It's fine dining, and I don't have any experience waiting tables (I know, but I have to try anyway), so I was hoping you guys could fill me in on the details, like pay, tips, atmosphere, etc.

Great food,top service, state of the art restaurant. The staff should also be friendly and service you very well. The atmosphere should be calm and relaxing.

At a fine dining restaurant you are expected to be a super super waiter. Good waiters will ask if you want more water - great waiters will just refill your glass. Good waiters will write down what you want to order - great waiters will memorize it.

Pay - medium to high for waiters

Tips - depending on the richness of the patrons could be 20 to 25 percent

Atmosphere - quiet, sedate, elegant

Menu -  The menu at fine dining restaurants tends to be extremely classy with high quality ingredients and prepared by a well-known and talented chef with years of industry experience.

Dress Code - In most cases a fine dining restaurant will not permit jeans, t-shirts, hats and may even require a suit jacket and tie.

Waiters are expected to taste the daily specials before they are prepared each day so that if a customer has any questions or special requests you can tell them exactly what they will be getting. Additionally, you'll have to know how everything on the menu is prepared. Also, the service at a fine dining restaurant will generally be top notch. Expect each table to have no less than two servers directly responsible for it and a Maitre 'D overseeing service.
