Question:

What should I make?? Help anyone?

It's my parents anniversary next week, and I've decided instead of getting them some useless trinket, to make them a fancy/gormet dinner instead. Any ideas of what I could make?

My mom can't have anything with seeds or nut pieces (it's not an allergy, it's a physical agitation problem because they are so coarse), and is willing to try anything

My dad doesn't always want to try things, I made beef wellington a while ago and it went over well, but I don't want to do that again. He's not big into Indian spices (I think it's more cuz he's not used to them then not actually liking them). He's also has mild diabetes.

I'm experienced and love a cooking challenge, so any ideas are welcome. I want a salad, maybe a soup, main course (meat and veggies, maybe something else too) and a dessert that I can leave them and be done with it.

  1. i probably can't help you out too much but maybe you can get some ideas from the rachel ray website? or watch the food network!

Pork roast  Stuffed with (mix in separate bowl) fresh chopped garlic, fresh parseley, provolone cheese, parmesan with some olive oil and coarse salt and some black pepper.  Mush all that up then run some slits in the meat and fill them with the mixture.   Make extra stuffing mix and peel and slice some potatoes and toss the mixture in it.  A one pan meal.  Red cabbage or broccoli rabe in garlic and oil on side.  I dont do alot of baking so sorry , the only thing I can think of is a peaches and bluberry cobler topped with vanilla ice cream.

Recently I made a shrimp bisque that was wonderful -instead of the normal thin soup, I added finely chopped chives and finely chopped roasted red peppers-from a jar- after straining the bisque as directed. I like the little bits of green and red in the orange soup! Maybe a grilled salmon salad on baby green spinach leaves to follow. and finish with a cherry dessert or sherbet dessert of some kind. Food Network online is a great resource for recipes. Good luck!

  9. Pot roast with veggies and sour cream dill sauce (recipe follows), mashed potatoes and turnips with sour cream and chives mixed in, and a salad.  Also, chocolate cheese cake for dessert:

    Sour Cream Dill Sauce:

    1/2 Cup fat-free sour cream

    1 tsp. dried dill

    1 Ttsp. lemon juice

    1/4 shallot, minced

    dash cayenne pepper

    salt to taste

    pepper to taste
