well i don't know what your mom likes, but i've recently been cooking a lot of italian dishes that people really seem to like; eggplant parmesan and fettucini alfredo with chicken and spinach are probably my 2 favorites. they're not too hard to make, and most people really like stuff like this. serve with a salad and garlic bread for an elegant but satisfying meal! have fun!
