  7. i made eggplant parmesan last night & it was SO GOOD & everyone was really impressed! it is a bit time-consuming, but really not too hard. just peel a few eggplants & cut into like 1/4-1/2 inch slices, then salt them & put them in a strainer for awhile (to get some of the water out; you might need to squeeze a bit more out with paper towels to get them drier). fill a skillet with like 1/2-inch vegetable oil over high heat. dip the eggplant slices in beaten egg & then a mix of seasoned bread crumbs & parmesan cheese, & fry in the oil on both sides til golden; let drain on paper towels. to assemble the dish, use whatever tomato sauce you want (i cooked up some diced onion & garlic, added a big jar of ragu, & seasoned with salt, pepper, italian seasoning, & parmesan cheese) & put some on the bottom of your pan.  then do a layer of eggplant slices, more sauce, & mozzarella cheese; repeat layers until the eggplant is used up. bake uncovered at like 375-400 until heated through & cheese is browned.

(you could also make chicken parmesan with a similar method.)

i know these directions sound overwhelming, but it's really pretty fun & easy once you get the hang of it! i served over spaghetti with salad & garlic bread, & everyone raved! good luck :-)

  8. green beans

  10. Caramelized Garlic Shrimp

    Ingredients

    GARLIC:

    1/2 teaspoon kosher salt

    20 garlic cloves, peeled

    Cooking spray

    SHRIMP:

    2 teaspoons olive oil

1 pound medium shrimp, peeled and deveined

    1 teaspoon butter

    3/4 cup half-and-half

    1/2 cup fat-free, less-sodium chicken broth

    ¾ cup  grated Parmesan cheese

    1/4 teaspoon salt

    1/8 teaspoon black pepper

2 cups frozen loose-leaf spinach, thawed, drained, and squeezed dry

4 cups hot cooked linguine (about 8 ounces uncooked pasta)

    Preparation

    Preheat oven to 350°.

To prepare garlic, combine 1/2 teaspoon kosher salt and garlic in a bowl. Place garlic mixture on a jelly-roll pan coated with cooking spray. Bake at 350° for 25 minutes or until browned, stirring occasionally.

To prepare shrimp, heat oil in a large nonstick skillet over medium-high heat. Add shrimp; sauté 3 minutes or until done. Remove shrimp from pan.

Melt butter in pan over medium heat. Stir in half-and-half, broth, cheese, 1/4 teaspoon salt, and black pepper. Cook 1 minute or until cheese melts, stirring constantly. Stir in shrimp and spinach; cook 1 minute. Combine shrimp mixture, garlic mixture, and pasta in a large bowl; toss well. Serve immediately.
