    Doesn't matter what you fix - it's the fact that you fixed it that will make your mom happy.

  5. CHOCOLATE CHIP PANCAKES

    THAT SOUNDS YUMMY & MOMS <3 THEM!!!

    4 tablespoons (1/2 stick) unsalted butter

    1 cup whole, 2 percent fat, or 1 percent fat milk

    1 1/4 cups flour

    1 tablespoon sugar

    4 teaspoons baking powder

    3/4 teaspoon salt

    2 eggs

    6 ounces semisweet chocolate chips, or less to taste

    Butter, for cooking

    In a small saucepan, combine the butter and milk. Place over low heat just until warm and the butter is melted. Let cool slightly. In a bowl, combine the flour, sugar, baking powder, and salt; mix well.

    In a large bowl, whisk the eggs with a fork. Whisk in the milk mixture. Add the dry ingredients and mix just until barely blended. Add the chocolate chips and mix.

    Heat a griddle or large skillet over medium heat. Add about 1 teaspoon of butter and melt until bubbly. Ladle 3 tablespoons of batter for each pancake onto the hot surface and cook until bubbly on the top and golden brown on the bottom. Turn and cook until golden brown on the other side, about 30 seconds more. Repeat until all the batter is used up. Serve hot.

  6. if you can still find good oranges or grapefruit (if you like grapefruit) you can squeeze them for juice and either serve it straight or with a dry champagne for a memosa.  you could also make a mixed fruit salad (strawberries, blue berries, mellon, etc) toss with a little lemon juice to keep fresh.  whip up a fritata (baked egg pie) with about 6-10 eggs, 1.5 cups sliced mushrooms, 4 green onions or scallions, 3TBS milk and 2/3 cup parm cheese.  beat eggs with milk, salt and pepper, add cheese, mix then add veggies.  cook at 350 in a caserole dish. maybe pick up a fresh loaf of bread.

  8. When making a mother day brunch, I usually try to do a buffet

    a big salad bowl

    a  bowl of shrimp on ice/cocktail and tartar sauce on the side

    Veggie/cheese/cold cut  tray

    Corn/Potato chips with dip or salsa

    breadsticks with garlic spread

    meatballs or mini hot dogs in a sauce (you can do 2-3 different types of sauces or meats)

    Chocolate cake/chocolate cookies  for desert

    most can be bought at coasto/price club

My favorite brunch menus usually have a quiche or a breakfast casserole, lots of fresh fruit, a plate of ham or sausage, and muffins, with mimosas to drink.   I'm sure this sounds pretty predictable, but I also throw in a few items that aren't expected, such as shrimp cocktail, smoked salmon spread (chopped salmon, chopped red onions in cream cheese) on crackers, and trifle.
