I am going to cook for my boyfriend. I do every weekend and I am tired of having the same thing all the time. He is a country boy and doesn't like really frilly fancy things. Please if you have a good recipe, share. And please don't include things that I can't find at Kroger or Wal-mart... like exotic ingredients and such. Thanks so much!

  8. shrimp alfredo and garlic bread

  9. Real simple but delicious!

Take boneless skinless chicken breast and cut them in long strips (3 or 4 per breast depending on size) then you get deli ham and you wrap the chicken in ham, next you place them in a baking dish.  For the sauce you mix equal parts of cream of mushroom soup, sour cream, creme cheese.  So if you are making just for two one can of soup one block of creme cheese and one small carton of sour cream. Blend the three items together and pour over the ham wrapped chicken.  Then bake in the oven covered at 350 degrees for 30 minutes and then uncover and cook another 15 minutes.  Serve with butter noodles or mashed potatoes and you use the sauce as a gravy!

It is real good!  Try it with your favorite vegetable and some bread and a country boy will be happy!

    Cook's Notes

*Original recipe calls for 16 oz of both cheeses, but cutting it by half and substituting reduced-fat cheese drastically cuts down the fat and calories

or try this filling recipe for macaroni cheese:

    Ingredients

    250g/9oz macaroni

    40g/1½oz butter

    40g/1½ plain flour

    600ml/1pint 1½fl oz milk

    250g/9oz grated cheddar

    50g/2oz grated Parmesan

    Method

    1. Cook the macaroni in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.

    2. Melt the butter over a medium heat in a saucepan slightly larger than that used for the macaroni. Add the flour and stir to form a roux, cooking for a few minutes.

    3. Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.

    4. Meanwhile, preheat the grill to hot.

    5. Remove the sauce from the hob, add 175g/6oz of the cheese and stir until the cheese is well combined and melted.

    6. Add the macaroni to the sauce and mix well. Transfer to a deep suitably-sized ovenproof dish.

    7. Sprinkle over the remaining cheddar and the Parmesan and place the dish under the hot grill. Cook until the cheese is browned and bubbling. Serve straightaway.
