  1. I love cupcakes, but always try to make them a little bit healthier.  Here's one of my favorite low fat recipes I made recently:

    Mandarin Orange Cupcakes

    Yellow Cake Mix

1 can Mandarin Oranges (with juice)

    2 egg whites

1/4 cup water (or as needed)

Mix all together & bake per cupcake directions on the box.

    Frosting:

    Fat Free Cool Whip

    Sugar Free Instant Vanilla Pudding

Add the pudding a little at a time & add some skim milk if it needs thinning.

    Delicious!

  2. Apple Cake

    4 cups diced apples

    2 cups sugar

    1 cup raisins

    2 tsp salt, divided

    =================

    1 cup oil

    2 eggs, beaten

    1 cup walnuts

    =================

    2 cups flour

    2 ½ cups apple juice

    2 t baking soda

    2 t cinnamon

    • Mix apples, sugar, raisins, 1 tsp salt. Let stand 1 hour

    • Add oil, eggs and walnuts.

    • Sift in flour, juice, baking soda, cinnamon and 1 tsp salt.

    • Pour into greased 13” x 9” baking dish, 350 degrees for 1 hr and 15 minutes.

    • Let cool 15 minutes before serving.

  3. Hello Lyssa,

Do you like chocolate or candies? If you have butter or margarine, you can make almost anything on my website. There are lots of recipes there for cookies, cakes, candies, and more.

Good luck! I hope you find something sweet to make!

  4. spring fruit pizza

1 pouch Betty Crocker® sugar cookie mix

1/2 cup butter or margarine, melted

    1 egg

    1 cup whipping cream

1/2 cup Betty Crocker® Rich & Creamy cream cheese frosting (from 1-lb container)

3 1/2 cups assorted fresh fruit

    1. Heat oven to 375°F. Lightly spray 14-inch pizza pan or 15x10-inch baking pan with cooking spray.

    2. In medium bowl, stir cookie mix, melted butter and egg until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until light golden brown. Cool completely, about 45 minutes.

    3. In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Gently stir frosting into whipped cream. Spread over cookie pizza. Arrange fruit on top.

High Altitude (3500-6500 ft): Use 1/3 cup melted butter. Bake 12 to 17 minutes
