If she is your current teacher, all you can do is get her a card.  She is not allowed to accept gifts from current students because it is a conflict when it comes to determine the class grades.

Unless you know her well and you're friendly with her as opposed to other teachers, I don't think it would be a great idea to get her a birthday present.  She may think you are trying to suck up for a good grade or something like that.  If you want you could get your classmates together to get her a card and/or some nice small gift like a small box of chocolates or flower set.

for teacher appreciation week, i gave all of my teachers roses that were grown in our garden and wrapped the stem with a gold ribbon. so make her something special. if you know how to knit, you make her a soft drink cozy or something. if you do portraits, try sketching her. give her something that's FROM you, and not of the shelf of wal-mart. it sounds mushy and all, but what comes from you is the best gift she'll have.

You know what she'd really appreciate?  A note from you thanking her for what she's taught you and telling her you will never forget her.  If there's something special she's done for you, mention that.

Definitely give her a gift card. Ask her about her favorite store; when in doubt, Bath & Bodyworks is a good idea, as is something like Starbucks. Restaurant gift certificates are always nice as well.

Don't make it for too much, as its not appropriate, but somewhere around the $10-$20 range is good.
