Wood of course. If you are talking about a class project and the size is about a foot then there are several websites you can find the directions for making it.

Of course if you are making a large scale project - like to swing pumpkins across a field you can find those on line as well.

What will be the purpose of the trebuchet - for show or use (like throwing pumkins). Then you can tell what material would be best for this project.

In the small project there are even some plans that use toothpicks and Popsicle sticks.
