  1. Is this a serious question? Oh, well as she said, deer is the most common and freshness should be your first concern. After that you should know that wild animals all have a strong "gamy" taste, they are also very dry meat. This because they are constantly involved in survival and don't have the time to sit around overeating and building up the layers of fat which keeps our domestic meat tender and moist.

    My suggestion especially if you are intent on making ground beef is to buy cheap "regular" ground beef and mix them half and half. The almost total lack of fat on the game will mean that the mix will still turn out lean and the beef flavor will soften the "gaminess" of the other.....


  2. how about possum. there is also armadillo although i don't know if it is edible. deer is good. nutria is excellent as well.

  3. Bad idea,,, poor judgment,,,, and just silly..

    UNLESS you see or do the kill,,, the meat must be considered spoiled..

    Not being properly bleed just one,, or being gutted....

    If it bothers you remove any RK off the roadway that presents a hazard ...BUT remember California law prohibits you from touching the kill..what is your state's law.??

Since I don't know which road where, I'd guess the most common animal found by the road which can be made into a beef-like burger would be deer.  If you are salvaging road-kill I'd say your highest priority would be to get a fresh kill rather than caring what kind of animal it is.  Beggars can't be choosers.
