  1. You can use this site for ideas.

  2. There isnt really much you can do, since you don't have vanilla extract, but this is a good and delicious recipe;

    Chocolate cake

    1 cup butter

    2 cups white sugar

    2 eggs

    1 cup buttermilk

    1/2 cup unsweetened cocoa powder

    2 1/2 cups all-purpose flour

    2 teaspoons baking soda

    1/2 teaspoon salt

    1 cup water

Preheat oven to 350 degrees F (175 degrees C). If using layers, grease and line the pans with parchment paper. If using a 9 X 13 pan, grease and dust with cocoa powder. Sift together the cocoa, flour, baking soda and salt. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Alternately beat in the flour mixture and the buttermilk, mixing just until incorporated. Add the boiling water and beat for one full minute.

Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

  3. I'm assuming you want to make chocolate cupcakes from this list of ingredients so decide roughly how many cupcakes you want, I think this recipe will make about 15 small ones:

    1. Put the oven on about 180 degrees C with the shelf in the middle.

    2. Take 2 eggs and weigh them, then weigh out the same weight in white sugar, self raising flour and margarine (cooking margarine not flora) keeping them all separate in bowls.

    3. Boil a little water in the kettle.

    4. Tip the margarine and sugar into the food mixer and blend, or if no food mixer, let the marge warm up on the side for a while and mush the two together with a fork (takes a while) making sure there's no big chunks of marg leftover.

    5. Crack the eggs into the mix and tip in the flour and blend (or stir a lot)

    6. Put about 2 table spoons of cocoa powder (make sure it isn't drinking chocolate else it won't work) into a cup and add a little hot water and mix it into a thick paste (aim for a bit thicker than toothpaste) then put the cocoa paste into mix and stir in.

    7. spoon your mixture into cake cases - if you have a cake tray for the oven with the round dents in it, use that, if not sit the cases on a baking tray. You should roughly 2/3 fill each case, don't worry about smoothing it off as it will flatten out in the oven.

    8. Cook for about 20-30mins keep an eye on them and when they look golden brown take them out and listen to them, if you can hear a contant sort of crackling noise like tiny bubbles popping (it's quite faint) then put them back in for a few more mins, then get them out and listen again, when the popping noise has basically gone then they're done.

For more cakes weigh more eggs at the start and match that weight for the other ingredients.

    Good luck!!
