What sort of consequenses will I get in if I leave and stay in another country while on probation, if any?

I am fifteen years old, and I am on a years probation.

My probation officer has granted me a month, and no longer, to go to see my father in France.

What will happen if I decide to stay with him?

bad things...you are in the system now and there are rules. Do your duty to the probation office and then let life take you where it may. If you break that probation...whenever your return...5, 10 15 years from now...they will be waiting.
