  4. You don't really need a lot with spaghetti.  I would suggest some sort of vegetable, like asparagus or broccoli, breadsticks and brownies for dessert.

  5. fresh.tomato wedges, fresh mozzarella drizzled with olive oil, balsamic vinegar, basil, garlic powder. pinch thyme...squeeze fresh pierced lemon juice over all.....

    stewed tomatoes, onion, red & green pepper, cubed provolone cheese warmed and sprinkled with grated parmesan & romano cheeses.....place under heated broiler for 5 min. until top is crusty.

    steamed spinach, cooked frozen shrimp that have been thawed, sliced green olives stuffed with gorgonzola cheese...place in lge fry pan, spinach on bottom...pan braise until shrimp are warm...top with basil, garlic powder, & grated parmesan/romano cheese (can also melt sliced provolone over top)...serve over pasta that is mixed with melted butter or olive oil or as side dish to compliment pasta with red sauce...

    1.  Caprese salad (mozarella and sliced tomatos with olive oil and fresh basil)

    2   Antipasti platter:  cured meats, provolone, marinated mushrooms and artichoke hearts

    3.  Bruschetta with artichoke tapenade and sundried tomatos

    4.  Sauteed spinach with garlic and pignolia's

    5.  Sauteed zuchinni, red bell peppers, onion, and sliced crimini mushrooms with Italian herbs, hot pepper flakes, and parmesan.

    6.  Focaccia bread with olive oil, asiago cheese, and sliced olives

    7.  Panna Cotta

    8.  Mascarpone Cheesecake

    9.  Cornmeal Ricotta cake

    For dessert, I have used angel food cake with glazed strawberries....

  8. Side Dish:

    Potatoes Sauteed in Garlic and Olive Oil

    1 - bag potatoes

    1 - jar minced garlic

    1 - bottle extra virgin olive oil

    Salt

    Pepper

    Chop as many potatoes as you need into bite sized pieces and boil until cooked through, but not too soft. In a 10" skillet heat 2 Tablespoons of olive oil until it spatters when you splash it with water. Add potatoes wedges (do not overload the pan, you can always repeat this as many times as necessary), 1 Tablespoon of minced garlic, and a dash of salt and pepper. Sautee untill potatoes are golden brown. Place in a small hotel pan and keep warm in the oven (set to the lowest setting). Do not keep sitting in oven for too long.

    Non-traditional salad replacement:

    Slice a tomato into 1/4" slices and top a slice with a 1/4" inch slice of real mozzarella cheese and i small to medium leaf of fresh basil. Garnish with a pinch of fresh Italian parsley. Serve each guest with 3 on a side dish. To add richness, also add 1/4 of thin sliced Genoa salami.

    Dessert:

    This one is so easy, and guaranteed to please. Head over to the supermarket and pick up some spumoni ice cream and claret sauce. Neopolatin can work if spumoni is not available. Serve the spumoni (I prefer cut into traditional triangular wedges) drizzled liberally with the claret sauce.
