You want it to locate a satellite fast. The newer, and probably more expensive GPS' can locate a satellite in under a minute. Accuracy is also important. Also, it should be able to hold a micro-SD or similarly capable card for storage space (1+ gigs), this is ideal for not only recording loads of track data and waypoints, but also, depending on a GPS' capability, you can load your own map data into the GPS for visibility on screen. Those are key for any GPS. Car GPS' are a little different though, they really vary in the software functionality and generally speaking, the more you pay, the more functionality you'll get. For cars, you at least want voice navigation, or there's really no point in having a pure car GPS.
