When the weather is really hot, I don't want to eat anything hot or heavy and I don't want to stand over a hot grill.  This is the perfect light, but filling, dinner for sweltering summer nights.  You can dress it up or go casual with it.

My mom and me do not like cooking over a hot stove much in the summer. What we like to eat is potato salad, sandwiches, maybe some grilled chicken over on our indoor grill, salads and so forth.
