1. Fortifications it has to be the chinese. Besides the great wall which was built to prevent attacking tribes from entering, they also had these massive structures which were kind of like castles, they had high towers where they would use archers and their height advantage to rain down arrows on the advancing cavalry. the castles were not just tall but strategically placed for the height advantage and plus with the natural topography the attackers were often channeled into one area.

These fortifications were never breached and even if they were the insides were planned and designed to confuse the enemies with tunnels and pathways leading round and round.

fortifications it was definitely the chinese but defenses weren't just structures. Halbediers/pikemen played an important role in defenses against cavalry charges. They would often charge the enemy with support from their own cavalry.

The archers too. chinese (cho ku no archers i think) and the aztec archers (plumed archers i think). the best however have to be the english longbowmen with their insane range. the british fought those open battles more often than protecting their castles against seiges. you know the ones where the armies line up facing each other? so i don't know if they can be classified as defensive.

the hopplites i think too? the shell formation? greek maybe im not sure.

teutonic castles had alot of range.

    long answer. hope it helps.
