  5. It is predominantly ground allspice (Jamaciam pepper as Ilene said) but I think some add in some cinamon and perhaps clove.

    Some entertaining answers here though from folks who don't know what spiced beef ham is.

    Yes it exists, yes it is scottish (sadly can't get it here in edinburgh though) and no it is NOTHING like Bresaola or Carpaccio or any other dried beef or ham David LOL

  7. You talking about the air dried beef known as Blunderfleish or Brasoila in Italy, it is salted and cured much like prosciutto and then air dried, in a air circulated room until dried similar to a salami, then it is slow smoked only for flavour not to cook it.

    Spices would be powder like paprika, garlic, allspice and cloves. I have used it and like it, not everyones cup of tea, but it has a mild flavour like prosciutto and is served in a similar way, generally cold with veg or fruit, sometime like the dish called carpaccio, with olive oil, slivers of parmesan cheese and fresh ground pepper. It is mainly used as an appetizer or snack type food.
