What spices go into a Moussaka?

I used to use a mix but I'm not able to find one for Moussaka in the supermarkets anymore.

  1. Moussaka is mostly eggplants, tomatoes, onions, salt, pepper and tomato paste, some add cooked ground meat. Ground meat is cooked with lots of onions, garlic and salt to taste. It is added in layers with the ingredients for the moussaka, eggplants are slightly fried in oil, and drained, before adding other ingredients.Also the tomatoe paste is stired in any broth to make it into a sauce then you cover the whole mousaka with it. Then all is cooked in a glass dish in the oven. No other spice is needed

Hi there, look you can listen to all NonGreeks and add all sorts of herbs and spices  , but if you really want to go Greek  and nothing but Greek  then you will need salt ,pepper, and some nutmeg that you add to the Bechamelle sauce,  to give you an idea , your meat sauce has onions , salt, pepper, tomato paste and or tomato purey, what ever else you add is up to you , as for the grated cheese that you add to the Bechamelle you can use  Kefalotiri, or if you can't find that use good parmesan, there is no reason to add all the rest of the stuff you hear people use because the dish is rich in taste as is , try it this way and you will agree with me.

I am a former chef and have made it many times for the meat sauce and good bit of dried oregano, thyme or margorum, garlic, bay leaves and cinnamon, That is what make the sauce, and for the bechemel topping I add some fresh grated nutmeg, when slightly cooled along with the cheese, I like Kelafatri, but parmesan and white cheddar, 1 egg yolk, a few breadcrumbs and the topping is almost souffle like.

    I am of non greek heritage but need to my souvlaki, baklava, pastiso my moussaka alway got raves from greek people I worked for or with as being very authentic tasting.
