  1. Do you mean, in the dough? Absolutely nothing! It's the same dough used for (true) Italian pizza: just flour, salt and yeast.

    Then click on "Pizza recipes" on the left menu and then the Calzone you like the most for a full recipe.

    Make the dough and let it rise for one hour. Wash the tomato and slice. Spread the dough quite thin and divide into 4 disks (of 18-20 cm diameter).Top with crumbled ricotta cheese, a pinch of salt and pepperoni slices. Seal the calzone pressing on the dampened border: top the surface with tomato slices and mozzarella cheese. Place in the oven at 220 for 20 minutes.

    If you want a traditional calzone, like the one that you can order in a pizza place, it's easy to make: on the spread dough place some mozzarella cubes, cooked ham in slices, then fold the dough in half like a wallet and seal the border , (previously wetted). Paint the surface with tomato salsa and place in the oven at 200C for 20 minutes. Serve after placing some olive oil on top as in the photo to the left.

    4-5 ripe tomatoes

    Bufalo mozzarella, 300g

    Ricotta cheese, 250 g

    pepperoni, 150g

    Capers

    Oregano

  2. In the dough, absolutely nothing extra. If you want to add herbs and flavorings, put them into the calzone, not on the outside. At the temperatures you have to cook them at (400+ F) the herbs would burn awfully.

    As for Italian herbs(ps - fresh would be best) Basil, Oregano, Dill, & Marjoram are all good.

  3. Oregano mostly.  Also rosemary and basil.

    But, the crust is weird because the herbs will burn and turn black if they're exposed to the oven.  You'd probably get better results by mixing the herbs into the ricotta or on top of the mozarella.
