I've looked at recipies for Jamaican Oxtail and they don't season it over night like how you'd season mutton but I've been told to do that.. Also is it best to keep a bit of the fat on to flavour.. I suppose it's optional.. Jus that jamaicanrecipy.com is good but anyone tell der way ca not everyone I know cooks it so need tips like wen to add gully (Butter) bean etc etc
